Herb Butter Roast Turkey

Ingredients

  • 1 (12–14 lb) whole turkey, thawed

  • 1 cup unsalted butter, softened

  • 4 cloves garlic, minced

  • 2 tbsp fresh rosemary, chopped

  • 2 tbsp fresh thyme, chopped

  • 1 lemon, zested

  • Salt & pepper to taste

Directions

  1. Preheat oven to 325°F (165°C).

  2. Mix butter, garlic, herbs, lemon zest, salt, and pepper.

  3. Loosen the turkey skin gently and spread the butter mixture under and over the skin.

  4. Stuff cavity with lemon halves and herbs.

  5. Roast for 3–3½ hours, basting occasionally, until the thickest part of the thigh reaches 165°F.

  6. Let rest 30 minutes before carving.
