Lemon Bars

Ingredients

Crust:

  • 1 cup gluten-free flour

  • 1/4 cup powdered sugar

  • 1/2 cup butter

Directions

  • Preheat oven to 350°F. Mix crust ingredients and press into an 8x8" pan.

  • Bake 15 minutes.

  • Whisk eggs, sugar, flour, lemon juice, and zest. Pour over crust.

  • Bake 20 minutes more. Cool and dust with powdered sugar.

Filling:

  • 3 large eggs

  • 1 cup sugar

  • 2 tbsp gluten-free flour

  • 1/2 cup lemon juice

  • Zest of 1 lemon
