Gluten Free Chocolate Chip Cookies

Ingredients

  • 2 sticks of unsalted butter

  • 1 cup of light brown sugar

  • 1/2 cup of granulated sugar

  • 2 eggs

  • 2 teaspoons of vanilla extract

  • 3 cups of gluten free flour

  • 2 teaspoons of baking powder

  • 1/2 a teaspoon of salt

  • 2 cups of chocolate chips

Directions

  1. In a bowl, combine 2 sticks of unsalted butter (softened), 1 cup of light brown sugar and 1/2 cup of granulated sugar. Mix using an electric mixer until smooth.

  2. Add 2 eggs, one at a time, mixing completely each time.

  3. Mix in 2 teaspoons of vanilla extract.

  4. In a separate bowl, combine 3 cups of gluten free flour, 2 teaspoons of baking powder and 1/2 a teaspoon of sale.

  5. Add the dry mix to the wet mix, a little bit at a time. Make sure that everything is well mixed before adding more of the dry ingredients.

  6. Fold in 2 cups of chocolate chips.

  7. Line a rimmed baking sheet with parchment paper.

  8. Spray the parchment paper with a nonstick spray.

  9. Using an ice cream scoop, equally portion out your cookies and place them on the tray, leaving room next to each cookie to spread.

  10. Bake at 350 F (176 C) in the center of a preheated oven for 12-15 minutes.

  11. Let cool completely before eating, they need time to firm up.
