Gluten Free Chocolate Chip Cookies
Ingredients
2 sticks of unsalted butter
1 cup of light brown sugar
1/2 cup of granulated sugar
2 eggs
2 teaspoons of vanilla extract
3 cups of gluten free flour
2 teaspoons of baking powder
1/2 a teaspoon of salt
2 cups of chocolate chips
Directions
In a bowl, combine 2 sticks of unsalted butter (softened), 1 cup of light brown sugar and 1/2 cup of granulated sugar. Mix using an electric mixer until smooth.
Add 2 eggs, one at a time, mixing completely each time.
Mix in 2 teaspoons of vanilla extract.
In a separate bowl, combine 3 cups of gluten free flour, 2 teaspoons of baking powder and 1/2 a teaspoon of sale.
Add the dry mix to the wet mix, a little bit at a time. Make sure that everything is well mixed before adding more of the dry ingredients.
Fold in 2 cups of chocolate chips.
Line a rimmed baking sheet with parchment paper.
Spray the parchment paper with a nonstick spray.
Using an ice cream scoop, equally portion out your cookies and place them on the tray, leaving room next to each cookie to spread.
Bake at 350 F (176 C) in the center of a preheated oven for 12-15 minutes.
Let cool completely before eating, they need time to firm up.
