Gluten-Free Chicken Fried Rice

Ingredients

  • 2 cups cooked rice (cooled)

  • 1 cup cooked chicken, diced

  • 1 cup frozen peas and carrots

  • 2 eggs, beaten

  • 2 tbsp gluten-free soy sauce

  • 1 tbsp sesame oil

Directions

  1. Heat sesame oil in a skillet over medium heat.

  2. Add peas and carrots; cook 3 minutes.

  3. Push to the side, add eggs, and scramble.

  4. Stir in chicken and rice.

  5. Pour in soy sauce and stir-fry 5 minutes.
