Gluten-Free Chicken Fried Rice
Ingredients
2 cups cooked rice (cooled)
1 cup cooked chicken, diced
1 cup frozen peas and carrots
2 eggs, beaten
2 tbsp gluten-free soy sauce
1 tbsp sesame oil
Directions
Heat sesame oil in a skillet over medium heat.
Add peas and carrots; cook 3 minutes.
Push to the side, add eggs, and scramble.
Stir in chicken and rice.
Pour in soy sauce and stir-fry 5 minutes.
