Breakfast Quesadilla
Ingredients
1 gluten-free tortilla
2 large eggs
¼ cup shredded cheddar or Monterey Jack cheese
2 tbsp diced bell peppers
2 tbsp diced onion
2 tbsp cooked bacon or breakfast sausage (optional)
1 tbsp butter or olive oil
Salt and pepper to taste
Optional toppings: salsa, avocado slices, or sour cream
Directions
Whisk together eggs, salt and pepper.
Pour into pan with vegetables, stir gently and remove from heat
On one half, sprinkle half the cheese, then layer with scrambled eggs and remaining cheese. Fold tortilla in half.
Wipe the pan clean and add the remaining butter or oil. Place the folded tortilla in the pan and cook 2–3 minutes per side until crispy and golden brown.
Cut into wedges and serve warm with salsa, avocado, or sour cream.
