

Gluten Free Banana Oat Muffins
Ingredients
1 cup of mashed bananas
180 grams of gluten free flour
150 grams of old-fashioned oats
133 grams of granulated sugar
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon
120 milliliters of almond milk
60 milliliters of vegetable oil
1 teaspoon of vanilla extract
2 eggs


Directions
In a bowl, mix together the gluten free flour, old-fashioned oats, granulated sugar, baking powder, baking soda, salt and cinnamon. Set aside.
In a separate bowl, mix together the almond milk, vegetable oil, vanilla extract and eggs and mashed bananas.
Combine the dry ingredients with the wet ingredients.
Using an ice cream scoop, fill a well-greased muffin tin.
Add more oats on top of each muffin before baking.
Bake at 375 F (190 C) for 18-22 minutes.
