Gluten Free Banana Oat Muffins

Ingredients

  • 1 cup of mashed bananas

  • 180 grams of gluten free flour

  • 150 grams of old-fashioned oats

  • 133 grams of granulated sugar

  • 1 1/2 teaspoons of baking powder

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 1 teaspoon of cinnamon

  • 120 milliliters of almond milk

  • 60 milliliters of vegetable oil

  • 1 teaspoon of vanilla extract

  • 2 eggs

Directions

  1. In a bowl, mix together the gluten free flour, old-fashioned oats, granulated sugar, baking powder, baking soda, salt and cinnamon. Set aside.

  2. In a separate bowl, mix together the almond milk, vegetable oil, vanilla extract and eggs and mashed bananas.

  3. Combine the dry ingredients with the wet ingredients.

  4. Using an ice cream scoop, fill a well-greased muffin tin.

  5. Add more oats on top of each muffin before baking.

  6. Bake at 375 F (190 C) for 18-22 minutes.
